This is a simple and easy recipe of Bottle Gourd or lauki, called Lau in Bengali. Ghonto is a preparation where you cook and mash the ingredients roughly be it a single vegetable or mixed.
This goes well with Rice.

Method:
1. Heat oil in a pan.
2. When heated, temper with bay leaves and paanch foron.
3. When tempering starts sputtering add ginger and green chili and saute for 30 seconds.
4. Add tomato and saute till tomatoes are mushy and almost cooked.
5. Add chopped lauki. Cover and cook and intermittently give a good stir.
6. Cook till lauki is cooked. Add salt. Add chopped coriander.
7. Mix well and cook till water is dried up.
8. Serve with plain rice.

- Tomato - 1 big, finely chopped
- Green chili - 4-5, finely chopped
- Coriander leaves - 1 Tbsp chopped
- Ginger - 1 tsp finely chopped
- Bay Leaves - 2
- Turmeric powder - ½ tsp
- Salt - to taste
- Oil - 2 tsp
- Paanch foron - 1 tsp (This is a mix of five forons - jeera, saunf, kalo, kalonji, methi and rai)
